VINEYARDS
Selection of own vineyards from the terroirs of Briones, San Vicente, Alesón (Finca San Antón), Villamediana, Agoncillo, and Tudelilla, distributed in 20 plots of different altitudes, soils, and orientations.
HARVEST
Manual. All grapes remain in a cold chamber for 36 hours before processing on a selection table. The harvest began in early October for Tempranillo, and mid-October for Graciano and Maturana Tinta.
ELABORATION
After a gentle crushing, the must is gravity-fed into small French oak vats where it ferments and macerates in contact with the skins at a controlled maximum temperature of 28°C, receiving light pump-overs for 20 days.
MALOLACTIC FERMENTATION
In small French oak vats.
AGING
16 months in French (60%) and American (40%) oak barrels, with periodic rackings and a minimum of 6 months in the bottle rack.
THE BOTTLE
Our bottle is inspired by an original from the 18th century, which can be visited at the Vivanco Museum of Wine Culture.
TASTING NOTES
Bright red color with light purple hues. Fresh and intense aromas of red fruits, with spicy and licorice notes, accompanied by elegant toasty and smoky aromas. On the palate, it is fresh and sweet, with an elegant, persistent, and well-balanced mouthfeel.
SERVICE AND PAIRING
Serve at a temperature between 16 and 18°C. Perfect to accompany all kinds of tapas, Mediterranean dishes, rice, legumes, pasta, and all types of white and red meats.
